Resulting from the distinctive expertise of Fromagerie Bergeron, the 2-year-old cellar cheese is made with milk from our northern terroir, which gives it aromas of burned caramel and a pleasantly creamy mouthfeel.

Food, beer and wine pairings
This cheese can be eaten in a plate of fine cheeses with dried fruit, shaved into an arugula salad, on pesto pasta with fresh tomatoes, in a tartar, in risotto, in poultry stuffing (ballottines). 

Louis Cyr 2 years can be enjoyed with dry cider, dark beer/dopplebock or sour beer, white wine: Pinot gris, riesling, sauvignon blanc, unwooded chardonnay, chenin blanc (Loire), red wine: Sangiovese (Tuscany), Malbec (Loire), Gamay, Pinot noir or dessert wine: Late Harvest type. Red: Muted type (oxidative).

Ingredients
Pasteurized milk, salt, calcium chloride,bacterial culture, microbial enzyme, annatto, potassium sorbate and natamycin on the surface.
